Jenna's Treats & Eats: Hot and Sour Veggie Noddles

Guess who got themselves a new spiralizer? That’s right, this gal!

Considering my old spiralizer was purchased at the dollar store and only really worked with zucchini I was pretty excited to pull the fancy new one out of the box and start making myself some delicious veggie noodles. Inspired by dozen of Pinterest recipes but having few of the necessary ingredients the hubby and I decided to improvise with what we had on hand and the result was pretty darn yummy. A little sour, a little spicy and a whole lot of veggie goodness. Top with your favourite protein (we added some grilled shrimp) or enjoy as is for a simple no cook meal.

Ingredients

1 Tbsp lime juice

2 Tbsp vinegar

2 Tbsp honey or maple syrup

1 Tbsp oil

1 clove garlic, minced

1/8 – ¼ tsp red pepper flakes,

1 cucumber

2-3 large carrots, peeled

½ a green pepper, cut into cubes

Sesame seeds, to garnish

Directions

Whisk lime juice, vinegar, honey, oil, garlic and red pepper flakes together in a small bowl. Set aside.

Spiralize the cucumber and carrots. If you don’t have a spiralizer you can cut your veggies into long, thin strips.

If your cucumber noodles seem a little too wet press them between a few pieces of paper towel for a couple minutes to draw out the extra liquid.

Throw your veggies noodles, chopped green pepper, and sauce into a large bowl. Gently mix to combine. Garnish with sesame seeds and enjoy!
